Try This Recipe: One Skillet Beef Stroganoff
Now that the weather is getting cooler, comfort foods are where it's at.
There is nothing like a nice, hearty and creamy dish of one of your favorite winter recipes.
One of my favorite comfort foods is Beef Stroganoff.
I love this dish because it can be altered in ways that accommodate how much time you have; for example, if you are short on time and need a quick meal, the one skillet method is perfect for a complete, hearty meal.
So, grab your big skillet and let's get to cookin'!
2 Tbsp olive oil (or preferred oil)
2 cups mushrooms
1/2 cup of white onion
2 minced garlic cloves
1# ground beef (choose preferred lean-ness)
2 tsp of paprika
4 cups of beef stock
8 oz of egg noodles
1/2 cup of sour cream
1 Tbsp cornstarch or tapioca starch
Parsley for garnish
Salt & Pepper to taste
In a large pot, heat olive oil. Add mushrooms and season with salt and pepper. Add the onions and garlic Cook until onions are translucent. Add the ground beef and cook until brown. Stir in the paprika. Add beef stock and egg noodles. Give it a stir and cover. Simmer for 15-20 minutes or until al dente. Lower the heat, add sour cream and cornstarch. Stir until thickened.
Garnish as desired and enjoy! 😋
