- 2# chicken breasts, cubed
- 2 bell peppers, chopped
- 1 cup mango, fresh or frozen (unthawed)
- 1 cup mild salsa
- 1 cup full-fat coconut milk from can
- 2 Tbsp lime juice
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Fresh cilantro (for garnish)
- 1 Tbsp coconut oil
- Salt and pepper to taste
Add the salsa verde, mango, coconut milk, lime juice, cumin, chili powder, and smoked paprika to a blender; season with salt and pepper to taste. Blend until creamy. Add more coconut milk for a creamier texture (if preferred). Heat coconut oil over medium heat. Add chicken and cook until brown. Add bell pepper and cook until desired softness. Pour in the coconut sauce from blender and bring to simmer. Cook until chicken is all cooked through and season with salt and pepper as you desire. Top with cilantro garnish, and enjoy!
